Elizabeth is a medical anthropologist who strives to improve health equity by understanding the social forces that shape eating and stress pathways. Before starting as a Health Systems Research Fellow, Elizabeth examined these dynamics in Spain with people who had immigrated from countries in Latin America. She established a mixed-methods cohort study with the University of Alicante Department of Public Health to assess health promoters and barriers during resettlement. Elizabeth was selected for a US Fulbright Scholarship in Spain to continue the project after completing her PhD from Northwestern University. Other prior work included a qualitative study with US food industry workers during the Covid-19 pandemic economic shutdowns, and a mixed-methods pilot study on the health benefits of green exercise.
